Raspberry Cobbler Smoothie

It’s tough to enjoy a good dessert in the summer as most involve running the oven at high temperatures for extended periods of time. When you live in a house with no air conditioning and no nearby trees for shade, you can pretty much kiss all baked goods goodbye until fall arrives. Well not anymore! I was craving an icy cold smoothie for breakfast the other day and surprised myself with dessert in a glass! Ground oats, vanilla Greek yogurt, and frozen raspberries make for a healthy yet filling base, while vanilla extract, ground cinnamon, and nutmeg make this taste like a decadent cobbler.

(makes 1 large smoothie)


1/2 cup old fashioned oats

1 cup vanilla Greek yogurt

1 1/2 cups frozen raspberries

1 Tbs honey

1/2 tsp ground cinnamon

1/2 tsp ground nutmeg

1/4 tsp vanilla extract

1 Tbs chia seeds (optional)

Add old fashioned oats to a food processor or blender and pulse into a fine powder.

Next you’ll add the Greek yogurt, frozen raspberries, honey, cinnamon, nutmeg, vanilla extract, and chia seeds if you chose to add any.

Puree until completely smooth.

Transfer to a large glass, sprinkle with a bit of nutmeg, oats, and top with a raspberry. Serve right away.
