Right now all I want is to feel the warmth of the sun, breathe in the familiar smokey smell of BBQ’s, and kick back with a tiki drink! Sadly I must face the cold harsh truth.. Winter is still here and the possibility of a vacation is non-existent at this point. Not to be beaten down by the winter blues, I created a sweet and spicy cocktail with a tropical twist that makes you forget all about your snow covered driveway! The heat from the jalapeño infused vodka, sweetness of fresh mango puree, and a light finish of mint makes a perfect combination to remind you that warmer days are ahead!
This is a great cocktail to serve at parties since most of the ingredients can be prepared the night before!
1 jalapeño pepper
1 to 1 1/2 cups vodka
1/2 cup sugar
1/2 cup water
1 mango, peeled, pitted, and diced into small chunks
Juice from 1 lime
Honey and sugar for rim of glass
Fresh mint leaves
For 1 martini:
5-6 fresh mint leaves (a few extra for garnish)
3oz jalapeño infused vodka
1oz simple syrup
3 Tbs mango puree
Jalapeño slices for garnish
Cut jalapeño in half and place in a medium sized canning jar or other glass container that seals. Pour vodka into the jar until it just covers the pepper halves. Give it a good shake and place in the refrigerator to infuse for 6-8 hours or overnight. Shake and taste test every 4 hours until you have the desired flavor and spiciness.
To make simple syrup, combine sugar and water in a small saucepan and bring to a boil. Stir until sugar is completely dissolved. Remove from heat and let syrup cool completely.
Place diced mango and juice from 1 lime in a food processor or blender and puree until smooth.
Now to put everything together!
Coat the edge of a martini glass with honey and then dip into a shallow dish filled with sugar to coat the rim.
Muddle mint leaves in the bottom of a cocktail shaker. Add vodka, simple syrup, mango puree, and a few ice cubes. Cover and shake like crazy! Strain into a martini glass, garnish, and serve!
