There is so much in this world that I want to see and so many things that I want to do. There are tons of experiences I’ve yet to experience and special events in the lives’ of my family that I want to be around to witness. I’m in my thirties and that’s hardly an old maid but I’ve not really taken care of myself very well the past few decades.
I’ve worked hard and tried to make a career for myself. Which is sat behind a computer screen 90% of the time. While I am certainly more than happy blogging for a living, it’s made me quite sedentary. And I have a tendency to be super focused. Like a laser beam focused! That basically means I forget to eat. I’ll wake up in the morning and grab something to drink and sit down to start making things or writing about making things around 7. Normally around 3 or 4 I realize I haven’t eaten and I’ll grab something to munch on while I type away. This, all of this I do to myself is not healthy.
But I’m getting better. Lots better in fact. I have to admit that my Mimmie (grandmother) calling to remind me to eat every now and again doesn’t hurt :) Plus I make myself lists and notes for my day’s work. Today’s note even said “push the water” as I realized I didn’t drink as much as I should the day before and needed to get back into the swing of things!
I’ve started stocking the fridge with healthy things and grabbing healthy meals while I’m out restocking on printer paper or glitter. For a while my go to for a quick meal has been Wendy’s. I’m Celiac, they have gluten free options and I have NEVER gotten sick at a single one. And I travel a lot! So stopping in to Wendy’s while I’m out and about is a no brainer.
Plus I like salads, always have, really. But sometimes a salad only seems like a healthy option. Have you ever seen those reports that show how a salad at some places is actually more calories and fat than the burger meal? It’s insane! But I know that the salads at Wendy’s are actually good for me. I always get the half salad because it is more than enough.
My favorite is the Apple Pecan Chicken. Now I can’t eat the pecans because they aren’t GF but everything else is fair game for me. I love fruit with savory this salad has red and green apples, dried cranberries, blue cheese and grilled chicken topped off with a pomegranate vinaigrette. It rings in at only 350 calories with 19 grams of protein and lots of antioxidants from the cranberries.
My next favorite is the BBQ Chicken Ranch which surprises me because there is corn in it. Corn in a salad? Unheard of! Well, not really but just normally not my cup of tea. But I LOVE this salad and the corn in it! The lettuce mix for this thing is insane with iceberg lettuce, romaine lettuce, red & green romaine, red & green oak, red & green leaf, lolla rosa, tango, spinach, mizuna, red chard and green chard. This is a nutritious meal with 2 servings of vegetables, 1.5 servings of lean protein at 13 grams and 1 serving of dairy with 300 calories.
And I also like how fresh the salads at Wendy’s are. There is no frozen produce thawed out and cold chicken tossed in that was cooked who knows when. The veggies are chopped fresh every day and the chicken grilled when you order your meal. They’re so fresh that I actually buy two :) One for lunch on the day and one for lunch the next because it is still gangbusters! Plus, I’ll remember to eat an Apple Pecan Chicken salad every day of the week. No missed lunch that day!
