With things warming up here in Portland, all I want to eat is ice cream! Since a steady diet of sugary ice cream is generally not recommended, I created a simple guilt-free version that’s just as decadent and delicious as the full fat and sugar-filled store bought types. This three ingredient strawberry banana ice cream is not only dairy-free but sugar-free as well making this a great dessert to serve up at a party or indulge in all by yourself!
2 bananas, sliced and frozen
2 cups fresh strawberries, sliced and frozen
1 Tbs honey
Place ingredients in a food processor and puree for 1-2 minutes.
Scrape down the sides and continue to process until completely blended and smooth.
Your ice cream will be a nice soft serve consistency at this point and feel free to enjoy a bowl or two, but if you want a more solid consistency, transfer mix to a bowl or pan.
Cover and freeze for 6-8 hours or overnight.
