Despite being in full-blown fall mode (I’m in denial about summer still happening) I had one last warm weather recipe in me! A mouthwatering blend of tea, lime juice, and my ever-trusty, Sailor Jerry Rum. Shake it up and pour over frozen chunks of watermelon and you’ve got yourself a sweet and refreshing cocktail to sip. This is also a great make-ahead cocktail so you can whip up a pitcher-full to have ready for your next gathering. If you need an excuse, National Rum Day is happening on the 16th! Just saying!
(makes 2 drinks)
2-3 cups of watermelon chunks
2 cups of water
2 black tea bags
1 1/2 Tbs honey
1/4 cup Sailor Jerry Rum
Juice from half a lime
Fresh mint, lime, and watermelon slices for garnish
Place watermelon chunks in a zip-lock bag and freeze for 6-8 hours or overnight.
In a small saucepan bring two cups of water to a boil, remove from heat, and add tea bags. Allow tea to steep for 5 minutes. Remove tea bags and stir in honey until it dissolves. Pour mixture into a cocktail shaker, add rum, and lime juice. Place in the refrigerator to cool for 1-2 hours or overnight.
When ready to serve, add a handful of frozen watermelon to two glasses. Shake tea mixture and strain into glasses. Garnish and serve!
