January always seems to bring on a wave of healthy resolutions.. eating only organic, running 5 miles a day, cutting out soda, ice cream, etc.. While those resolutions might be pushing us to be a better and healthier version of ourselves, they can be a bit hard to stick to if you don’t allow a little wiggle room here and there. I decided to concoct a dessert-like smoothie so you can have your strawberry shortcake and drink it too!
Most of the recipes I’ve found call for pound cake, but I chose to use Nilla Wafers instead. Not only were they lower in calories, but I didn’t have to worry about how I was going to use up the rest of a cake since the recipe only calls for a 1/2 cup of it! And Nilla Wafers are one of my favorite cookies.. don’t worry Oreos, you’re still number one! I also used fresh strawberries, skim milk, and Greek yogurt to up the protein.
(makes 1 large smoothie)
1 cup fresh strawberries, hulled and quartered
1/2 cup (8-10) Nilla Wafers
1/2 cup skim milk
1/4 cup Greek vanilla yogurt
3-4 ice cubes
Whipped cream (optional)
Place strawberries in a zip-lock bag and freeze overnight. Place Nilla Wafers in a blender or food processor and puree into crumbs.
Add frozen strawberries, milk, yogurt, and ice cubes and process until smooth.
Top with whipped cream and serve right away!
