I hope that everyone overindulged a bit yesterday and had a wonderful Thanksgiving filled with food, friends, and family. I’m sure today the last thing on anyone’s mind is food though, so I thought I would offer up this light and aromatic Rosemary and Pomegranate Fizz cocktail recipe instead!

I often cook with what I’m drinking, but every now and then my dishes inspire a cocktail instead. Using some of the prominent flavors from our Friendsgiving feast last Sunday, I put together a festive and blushing cocktail that you’ll be sipping all through the holidays! The aromatic rosemary, sweetness of the pomegranate, and tingly bubbles from the champagne make this a crowd pleasing favorite!

(makes 2 cocktails)


2 oz pomegranate juice

1 oz rosemary simple syrup (recipe follows)

1 oz vodka (you can also use gin or white rum)

Dry champagne (white or pink)

Pomegranate seeds and rosemary sprigs for garnish

Rosemary Simple Syrup:

¼ cup sugar

¼ cup water

1 sprig of fresh rosemary

Combine sugar, water, and rosemary in a small saucepan over medium to high heat. Bring to a boil and then remove from heat. Let rosemary sprig steep for 5 minutes before removing and discarding. Place mixture in the refrigerator to cool for 10-15 minutes.

When ready to make your cocktails, divide pomegranate juice, rosemary simple syrup, and vodka between two champagne flutes. Top with champagne, garnish, and serve!

    Yum! This is a combination of all my very favorite things.. and this would be perfect for my Christmas Eve feast this year! Adding this to the plan!

    This rosemary and pomergranate fizz is now on my Christmas to make list.. it looks so refreshing and delicious!
