I’m not sure what happened to the mild summers of Oregon, but they seem to have been replaced with the familiar sweltering summers of the Midwest I grew up in! With no air conditioning we’ve been trying just about everything to keep ourselves and our house cool. Aside from planting myself in front of the fans with an ice pack on the back of my neck, the only other relief has been mixing up some icy cold, refreshing cocktails!
This Raspberry Rum Smash was a simple mix of muddled raspberries and mint, a citrusy kick from lemon, and an even bolder kick of rum! I topped it off with some club soda to make the perfect sweet, tart, and bubbly libation for summer!
(makes one drink)
5-6 fresh raspberries
5 mint leaves
1 tsp sugar
Juice from half a lemon
Extra raspberries and mint leaves for garnish
In a large glass, add raspberries, mint leaves, sugar, and lemon juice.
Muddle leaves and mash up the berries until the sugar dissolves. Add rum and stir. Add a handful of ice, top with club soda, and serve!
