This past spring one of my favorite tiki bars in Portland closed their doors for good, leaving me in search of a new date night spot and an insatiable thirst for their famous Mai Tais. I decided to pay tribute to them by whipping up my own version of this tiki classic with fresh summer raspberries and mandarin oranges.
I chose to use mandarin because their flavor is slightly stronger and sweeter than a traditional orange and I really wanted these drinks to pack a punch in flavor. The raspberry adds a nice touch of tartness and blushing color to the cocktail bringing all the ingredients together for a light, sweet, and summery drink!
(makes 2 drinks)
15 fresh raspberries + a few extra for garnish
2oz light rum
2oz spiced rum
2oz orange curacao
1oz orgeat syrup
Juice from 3 mandarin oranges
Juice from half a lime
Orange slices and fresh mint for garnish (optional)
Add raspberries to a large glass or cocktail shaker and mash with a wooden spoon to release their juice. Next add rums, curacao, orgeat syrup, lime juice, and mandarin orange juice. Vigorously shake for 30 seconds and then strain into two ice filled glasses.
Garnish with fresh raspberries, orange slices, and mint and serve.
