If I’ve learned anything about kids, its that boys can eat constantly. And when you have to work, a house to keep clean, and meals to cook, time can slip right on by you. The good news is that the boys are now 8 and 10 and pretty dang close to self sufficient when it comes to food. So long as a recipe uses nothing more than the microwave they can fix just about anything they want for themselves. Except microwavable macaroni apparently—we had a bit of a fire situation with that once. But that was a few years back before they had permission to use the microwave alone. I also can run really fast when the smoke detector goes off  :)

Now these boys love their veggies. They’ve grown up with salads and fruit as snacks and they still dig them. The oldest is a bit pickier as he gets older but they’ll eat just about any veggie that comes their way and that is AWESOME! We were on the hunt for some tasty and easy afterschool snacks, so we headed to Walmart. We found Tyson Cripsy Chicken Strips and set our minds to recipe making!

Since the boys are such big fans of salad, we grabbed a whole stash of fresh produce at Walmart. We made some awesome salad wraps with the added protein of those tasty Tyson® Crispy Chicken Strips. Since the strips can be heated in the microwave, the boys can rock out these guys all day long for themselves!

Cook your strips in the microwave. One fills a small tortilla perfectly!

Add dressing of choice and cheese if desired. We used a 3 cheese mix and ranch dressing. But you probably guessed the ranch, after all we are Okies!

Add in a huge handful of spring mix and the veggies the kids like in their salads and you’re all set. We used tomatoes but also considered cucumbers, onions and even radishes!

We all know that everyone needs the nutrition of fruits and vegetables in their diet. But sometimes kids aren’t so keen to eat them. What’s great about this is that they add in what they like to eat. Maybe snap peas are their thing or maybe they are obsessed with cucumbers. These wraps are so versatile that the kiddos can put any veggies in them. I love this because they are getting some great nutrition and they get to feel mature getting to choose for themselves!

Wrap up, or if burrito style is difficult for the kids to achieve  a taco fold will work, too and get ready to dine!
