I’ve been on a spicy kick over the last few weeks by adding peppers to nearly every recipe I’ve made. Coleslaw, sorbet, and now my latest creation, Pineapple Habanero Margaritas! Using fresh pineapple juice, lime juice, and muddled habanero pepper, these bad boys will definitely put a little sweat on your brow, but they’re oddly refreshing as well! Whip some up for your next party or enjoy them all to yourself!
(makes 2 margaritas)
1 habanero pepper
Juice from half a lime
1 tsp honey
1/4 cup pineapple juice
Sugar for the rim of the glasses
Lime and pineapple wedges for garnish
Rim two margarita glasses with honey and then dip into a shallow dish filled with sugar. Twist to coat rims and set aside.
Habanero peppers are generally pretty small, but I came across a monster at the grocery store (as you can see in the photo above, it’s nearly the length of a large lime)! I only used a small strip out of mine, but for the regular sized peppers I would say cut it in half. Discard seeds unless you want A LOT of heat, and place the pepper strip or half in a cocktail shaker.
Add tequila and then muddle the pepper with the end of a wooden spoon. Add curacao, lime juice, honey, and pineapple juice. Shake like crazy and then strain into ice filled glasses. Garnish and serve!
