I love creating homemade liquor infusions to make new cocktails and this honey lemon thyme champagne cocktail is one of my favorites so far! When I found myself snowed in a few weeks ago I took some leftover thyme I picked up for another recipe and added some lemon peels to make a citrusy garden inspired vodka infusion. I let it sit for a few weeks and after I was satisfied with the flavor, I put it to use for some cocktails the other day.
To let the infused flavors shine through, I only added a bit of honey for sweetness and topped it off with champagne which made this feel festive and celebratory. Although I wasn’t celebrating anything in particular (except maybe the promising weather forecast for warmer days ahead), this was a really light, smooth, and refreshing cocktail that despite it’s summer-inspired flavors, can definitely be enjoyed during any season.
Lemon-Thyme Infused Vodka:
6 sprigs of fresh thyme
1 cup vodka
Cut three 1″ wide strips of lemon peel from your lemon. Place in a canning jar or other glass sealing container with the sprigs of thyme. Fill to the top with vodka and store in a cool dark place for 1-2 weeks. I left mine for the full 2 weeks so that the thyme flavor really came through.
Remove lemon peels and sprigs, strain if necessary, and keep refrigerated or room temperature for as long as you like. For the cocktail itself you’ll want it chilled.
(makes 2 drinks)
Honey Lemon Thyme Champagne Cocktail:
2oz lemon-thyme infused vodka, chilled
1 Tbs honey
Fresh thyme sprigs or lemon peel twists for garnish
In a large glass or cocktail shaker, stir together vodka and honey until honey is completely dissolved. Distribute evenly between two champagne flutes, top off with champagne, garnish, and serve right away.
