Gluten Free Chocolate Chip Cookie Bars

  1. Preheat oven to 350°. Line a 9 x 13 glass casserole dish with parchment paper.
  2. Combine together melted butter and brown sugar in a large bowl or stand mixer until smooth.
  3. Add eggs, one at a time followed by the vanilla extract. Beat well to incorporate.
  4. In a separate bowl, mix together gluten free flour, salt, and baking soda. Add flour mixture to wet and mix until just combined. Do not overmix.
  5. Fold in chocolate chips and spread evenly into your prepared baking dish. Push red and green candies into the top of the batter.
  6. Bake for 30-40 minutes or until the edges have turned golden brown and a toothpick comes out cleanly.
  7. Allow to cool in pan for 2 hours and remove by pulling parchment paper up and out of the pan. Cut into bars to serve.

Notes

Bars will be crumbly straight out of the oven. Be sure to give them ample time to cool so they hold together when cut.

To keep the recipe gluten free, make sure your candies are GF and safe.
