For all of my ginger lovers, this one is for you!
I’ve been on a huge ginger kick lately, adding it to my stir-fry dishes, teas, and now cocktails because I just can’t seem to get enough of this versatile spice. On top of the numerous health benefits that it has (which makes you feel less guilty about the cocktails we’re about to use it in), I love the spicy zing of flavor it lends to dishes both sweet and savory.
I didn’t want the flavor of it to be too overpowering in the drink, so I simply muddled a bit of fresh ginger root with grapefruit and lime juices, added a blend of silver and spiced rum, and topped it all off with ginger beer to accentuate the flavor just a bit more. It tasted a bit like a tropical rum twist on a classic Moscow Mule.. sweet, spicy, and crisp! Don’t let the citrusy flavors fool you into thinking this is just a warm weather cocktail though because this is definitely one to enjoy sipping all year round!
(makes 2 cocktails)
Juice from half a grapefruit
Juice from half a lime
Strip of fresh ginger (1″ by 2″), outside skin removed
2 tsp sugar
2oz silver rum
1oz spiced rum
4oz ginger beer*
Fresh grapefruit wedges for garnish
*My favorite ginger beers to use in cocktails like this are Regatta and Fever Tree. They taste more like real ginger and aren’t as sugary tasting as other brands or ginger ale.
In a cocktail shaker or large glass, combine grapefruit and lime juices, the strip of ginger, and sugar. Muddle ginger with a muddler or end of a wooden spoon to release flavor. Add silver and spiced rum and shake for 10-15 seconds or until sugar is dissolved. Strain into two ice filled glasses, top off with ginger beer, and garnish. Serve right away.
