Easy Pumpkin Butter Recipe
Make no mistake about it I know just how lucky I am right now. The other day Rob was driving me from store to store looking for an item for a sponsored post that was stupidly elusive. We’d call ahead and “yes we have it” to get there and have them say “we do have it we just don’t have a clue where”. I guess things get crazy for stores during the holiday season when they’ve got all sorts of special stuff to put out so I can understand but it took a lot of driving and frustration.
We wound up hitting a Walmart just because it was close to some place we were going anyway, the Port Isabel Flea Market. I looked around and was ready to give up when I turn around and see Rob smiling warmly and pointing down into the cart. He totally found it! I walked right on by but he found it. The day was saved! To say I was in a good mood was an understatement. I had been working on this for almost a week and Rob just saved the day.
And as we’re walking around he informs me that there is an awful lot of Pioneer Woman stuff here. Just so you know, I’m super obsessed with Pioneer Woman things at Walmart. Like crazy obsessed. That plate in that pic up there? Pioneer Woman. My paper towel holder? My ceramic pitcher? My utensil holder? Yup, all Pioneer woman. BUT I only had one plate and one bowl. They’re kind of pricey at around $5 a piece so I’ve just been picking up something here and there. It turns out that this store has EVERYTHING Pioneer Woman. Little pinch bowls and coasters and things we’d never seen before. So I go and grab some things and each time we walked closer to the back at the store Rob would alert me… “hey there’s more PW stuff over here if you want to check it out.” How sweet is that? :)
And so I wanted to make a little something special. I asked if he liked pumpkin and since he did I whipped up about a pint using my easy pumpkin butter recipe so we could put it on toast for a little after dinner dessert. It’s super simple to make so I’m sharing the recipe here with you, too!
Easy Pumpkin Butter Recipe
This recipe will make one pint and does well stored in the refrigerator for about 2 weeks. Jar it for longevity or freeze for up to 3 months!
- 1- 15 oz. can of pumpkin
- 1/2 c. brown sugar, packed
- 1/4 c. granulated sugar
- 1 T. pumpkin pie spice
- 3/4 c. apple juice
- Place everything in a small sauce pan over medium-high heat. Cook until the mixture begins to bubble.
- Continue to cook 5 minutes, or until nice and thick, stirring continually.
- Serve immediately or refrigerate overnight for best flavor.
That’s it! Boom! For the best flavor I’d recommend using good quality apple juice. I like the refrigerated Simply Apple!
