Hello, Dream A Little Bigger readers! My name is Sasha and I’m the blogger behind Tattooed Martha!
Allison and I have been corresponding for quite some time now and it’s been amazing to watch her make leaps and bounds in the blogging world. Her talent and creativity are truly inspiring, so I feel extremely honored to be able to share one of my recipes here today!
Thanks to the unpredictable and intense winter weather that most of the United States has been suffering through, it’s inspired me to make lots of belly warming recipes! This salsa and corn queso dip has been my favorite so far. Most of the ingredients are items you probably already have on hand, so it’s perfect if you’re snowed in!
Half a package (4oz) of light cream cheese
1 cup sour cream
1 ½ cups shredded cheese (pepper jack, Monterey jack, or Mexican blend)
1 (8.25oz) can of corn, drained
½ cup to ¾ cup salsa (Allison has a great homemade recipe here!)
2 tsp taco seasoning
In a medium saucepan over low-medium heat, combine cream cheese, sour cream, ½ cup of the shredded cheese (reserve the rest for the top), corn, salsa, and taco seasoning.
Stir every couple of minutes until melted and completely mixed.
Pour into a 9 inch cake pan or small baking dish. Sprinkle remaining cup of cheese over the top and place on the middle rack of your oven.
Turn broiler on to 525 degrees F (274 degrees C) and bake for 2-3 minutes or until cheese on top is bubbly. Remove from oven and let it cool slightly before serving.
