Hello! Elena here again, today :)
You know what’s one of the things I do love so much of spring? Besides that it (hopefully) stops raining and I can greet the sun again? It’s the fact that rhubarb is finally coming back! And today you can share that joy with me as I collected all the ways to cook, bake or make drinks from rhubarb:
(And if you live in one of these places that don’t have these nonstop-raining-seasons in between the season – please do not tell me. I do not want to know! Or tell me and then invite me over!)
Let’s start with the obvious: A tart! A Rustic Rhubarb, Almond, and Honey Tart, that’s also gluten free, to be specific
Or a cheesecake!! Because, yes, cheesecakes are the best cakes in the world.

Or just make any other cake and cover it in rhubarb because it looks SO AWESOME!
If big cakes aren’t your thing you can still bake with rhubarb – you could bake a Honey, Rhubarb and Strawberry Bread :)
And now, as it is finally getting warmer it’s also time again for … I scream, you scream, we all scream for Rhubarb Ice Cream!
And then maybe we can top that icecream with some Rhubarb Curd?! Or we use the curd for some rhubarb bars (recipe on the same page!)
When we ate so much wh shouldn’t forget to drink something. And to stay true to our topic we should definitely drink a Strawberry-Rhubarb Lemonade!
And if it’s late enough at your place (and if not, it’s probably at my place, so feel free…), you could also drink a Rhubarb Fizz Cocktail :)
Lastly I wanted to share two a bit different recipes here. I desperatly want to try both!
