Are you bored with my obsession with candy corn yet? I sure as heck hope not! I think that I’ve shared everything related to these waxy little controversial candies (controversial in that you either love them or hate them AND wish them off of the face of the planet) as of today. Maybe. Perhaps. No promises.

We all know that the CC (candy corn) are super cute and that they get overused during fall for decor. I know that I’m hugely guilty of this BUT I’m totally cool with that too. So when I was trying to think up my umpteenth post around the cute candies I started to think about another one of my favorite things in the whole wide world… marshmallow rice treats. Now you may notice t hat I did not say Rice Krispy treats and that’s for a very good reason. The traditional cereal used in marshmallow treats is not gluten free which means I can’t have it as a sufferer of Celiac. For a time they produced a GF version and it was pretty dang good but much higher than the regular stuff.

Now I can buy some fabulous Marshmallow Dream Bars from Starbucks that are gluten free but they are also quite expensive. I want to say around $3 or $4 a pop. It’s super great when I have a craving and I’m out and about town because I can just whip through there and snag one, but on a regular basis that is just too high.

So I started using Rice Chex to make my treats and as it turns out, everyone I’ve made them for loves them. Some even prefer the satisfying crunch the Chex provides over the softer texture of the Rice Kripy treats. Let’s stop talking about them and start making these cuties then!

Ingredients:

First things first… remove the cereal from the box but leave in the bag. Carefully smash the cereal up into bits.

Grab 3 cake pans that gradually increase in size. I found and am absolutely in love with my itty bitty cake pan set I grabbed at Walmart. It goes from 4 to 6 to 8 inches and makes a lot more sense than huge pans when you’re dealing with a smaller crowd. I got mine at Walmart and it was definitely worth the $15 I paid for it. They also carry them at Michael’s and you can use a 40% off coupon if it is in stock at a store near you.

Using the softened butter grease the smallest pan.

And before we get going a quick word… for this recipe we’re making considerably more marshmallow than you normally would. This is simply so that the colors are easier to see on the treats, especially in the white area. You can always make this using your own personal Rice Krispy Treat recipe if you’re not quite so fond of this much marshmallow.

In a microwave safe bowl melt:

  • 1 2/3 cup small marshmallows
  • 1 tablespoon butter

Zap in 20 second intervals giving a good stir in between.

QUICK TIP! Use the softened butter to grease up your spatula or spoon between each round to help keep the marshmallow from sticking to it.

Quickly add in 1 1/2 cups of your crushed cereal and stir well. Spoon into your smallest pan and use parchment paper to press down until the cereal is as compacted as it will get.

If you use a piece of parchment paper to press the cereal down you don’t need to butter your hands. It won’t stick to the paper! Boom, so much neater!

Allow the cereal to sit a moment (I waited about 10 minutes) and use a buttered butter knife (that made me giggle) and loosen the treats from the pan.

Flip over onto a new piece of parchment paper and then place the disc in the center of the next larger pan.

In a microwave safe bowl melt:

  • 1 2/3 cup small marshmallows
  • 1 tablespoon butter

This time add in a good few drops of food coloring to make your marshmallow fluff orange colored. I used these food colors that have orange already mixed. I like that these colors are ready to go, especially for this recipe, as I don’t have to fuss with mixing colors and counting drops with something that sets up so quickly.

You want a decent concentration of color. Check out how orange that business is!

Press the orange into the pan around the white center piece using parchment paper.

Remove the now larger orange and white piece from the pan with a buttered knife.

Flip the piece pretty side down into the next largest pan.

In a microwave safe bowl melt:

  • 2 1/3 cup small marshmallows
  • 2 tablespoons butter

Once melted add yellow coloring and 3 cups of crushed cereal.

Push into the pan over the white and orange circles. Allow to set a few minutes, remove from the pan with a buttered knife and flip onto parchment paper. Allow to completely cool.

Cut these babies in half a few times and you have nifty little candy corn marshmallow rice treats!

You  may be wondering where the other half of these treats are… and in that case you’ll need to talk to Ollie. That dog has realized he’s tall enough to get things off of the counters. It’s a pretty new thing so I don’t think to push things away from him and sometimes he makes off with supper.

I actually caught him snatching his fourth piece from the counter top and I guess I was kind of impressed that he takes a piece, eats it and then goes back for another instead of just knocking it all in the floor or something. Perhaps for a thieving dog he still has manners :)

These treats were super simple to make and Rob and I both think they turned out crazy cute and very tasty. Even those of you who hate candy corn might really love these Autumn treats!
