Avocado Pico de Gallo Cups

When you’re short on time for prepping an appetizer, just remember to keep it simple. One of my go-tos is fresh, crisp pico de gallo! All you need is some garden fresh tomatoes, onion, cilantro, and add a little bit of heat from the jalapeno. Finish it all off with the squeeze of a lime and you’ve got a crowd-pleasing snack that only took minutes to put together. I decided to serve mine up in avocado halves to create a fun and delicious new way to enjoy this classic!

Ingredients:

3 roma tomatoes, seeds removed and diced

1/4 cup red onion, finely chopped

1/2 of a large jalapeno (remove ribs and seeds to make it less spicy)

1 garlic clove, minced

2 Tbs fresh cilantro, finely chopped

Juice from half a lime

Salt and pepper to taste

3 ripe avocados, sliced in half and pit removed

Combine everything but the avocados in a medium sized bowl and stir until evenly mixed. Cover and refrigerate if you’re making the night before. Spoon mixture into avocado halves and serve with tortilla chips.
