I love hot chocolate. Like big time, super fun, it’s great, great, GREAT! I might be a bit overexcited as I just consumed an entire handful of chocolate melting wafers (don’t judge) and a double espresso. I am peppy, peppy, peppy, people but that doesn’t lessen my love for hot chocolate.
One of the things that my family does sometimes is go out to eat breakfast. We normally all order water because it is free but sometimes we all get a hot chocolate topped with wonderful whipped cream and it’s a beautiful thing. We all nurse our mugs because there aren’t free refills and we may splurge now and again but there will be no more received when that cup is empty!
I like to make hot chocolate at home, too, especially when it’s cold. Where I am now it’s going to be 90° on Friday and we’re going to the beach! And that’s great but I do find myself missing getting wrapped up in a warm sweater and finding warmth in a hot mug of something tasty. I don’t miss the ice storms and power outages I would have had at my former address, though! And hitting the beach in a bikini like 2 weeks away from Christmas? That’s pretty dang awesome!
I’m still enjoying my hot beverages though and hot chocolate is at the tippity top of my fave list. So when I heard that International Delight was rocking out some ready to just heat up hot chocolates in the refrigerator case. It’s near the egg nog, which they also have and those types of things. I was super stoked to grab some. And when Rob and I found it, we grabbed both the milk and the dark chocolate versions. Yum! And then I took pictures of the refrigerator case because this is my job. Even if the kind of intimidating dude that was, for whatever reason, face talking or face timing or whatever right there thought I was a weirdo. Hey, dude, we all have to pay the bills!
When I brought my ice cream home it was a bit warm and I wanted some but I wanted something cooler. I wound up giving my hot chocolate a bit of a makeover and turned it into ice cream. And there are marshmallows because you HAVE to have marshmallows :) Let’s get this party started, shall we?
Hot Chocolate Ice Cream Recipe
With only 3 ingredients (wahoo!) this is a super simple way to have homemade chocolate ice cream in a hurry! I used my Cuisinart and so the proportions perfectly fit my little maker. Feel free to size up or down depending on your method
- 2 1/4 cup of International Delight Hot Chocolate (I used dark)
- 14 ounce can sweetened condensed milk
- 1 cup marshmallows
Into a large bowl add your hot chocolate and sweetened condensed milk.
Whisk until well incorporated.
Pour into your ice cream maker (or a pan in the freezer will work, too)
Once the ice cream has started to form (when you estimate it’s about halfway through, that was about 20 minutes in for me) add in your marshmallows and allow the ice cream to finish up.
Now my freezer is jacked and we’re going to get a new case freezer for the garage so my ice cream is kind of icy looking. Not sure why that happened after a spell in the freezer but it still tastes good so whatevs.
And look at that bowl? Can you beat that bowl? Adorable!
